Once harvested, we methodically process the leaves to preserve all of the wonderful health benefits that green tea has to offer.

Unlike other types of tea, such as black or oolong, green tea leaves are not allowed to oxidize. Instead, they are steamed, rolled, and pan-fired or basket-fired. This meticulous process allows the leaves to retain their health benefits, while creating an intricate and vibrant flavor.

Green tea comes from the Camellia sinensis plant, though its flavor can vary significantly depending on the growing region and methods of manufacturing.

History of Green Tea

Green tea is the oldest known form of tea, with sencha and matcha being among the most popular types. Green tea originated in China in 2737 B.C. and was carried to Japan in the 9th century to use medicinally. Most green teas are now produced in the Shizuoka prefecture of Japan, which is southwest of Tokyo.

Since its introduction, green tea has been an important part of Chinese and Japanese culture. In Japan, green tea is used to show respect and honor guests. It is also commonly used as a medicinal drink to aid digestion after meals. 

Health Properties of Green Tea

  • Contains an array of antioxidants
    Green tea boasts an array of antioxidants that are known for guarding the body from damage inflicted by free radicals that we encounter through smog, pollution, UV exposure, and the natural aging process. These antioxidants can help boost the immune system, and they are associated with cancer prevention.
  • Can boost weight loss
    Some studies have shown that green tea can amplify the effects of fat-burning hormones such as norepinephrine. This helps promote the breakdown of fat, which can aid in weight loss.
  • Has cholesterol lowering properties
    Research suggests that the catechins found in green tea can help lower LDL (the “bad”) cholesterol levels. Green tea may also help lower triglycerides, which are fatty acids that can increase your risk of a stroke if in high concentrations.
  • Contains L-Theanine
    L-Theanine is an amino acid that has been linked to improved focus and clarity. Some studies also indicate that L-Theanine can help promote calmness, especially for individuals with ADHD.
  • Has lower caffeine levels
    Since green tea leaves are not allowed to oxidize, they contain a much lower amount of caffeine than other types of tea – like black or oolong. This makes green tea a great option for people who have adverse reactions to caffeine, such as anxiety or poor sleep.

How to Prepare Green Tea

How you prepare your cup of tea can impact how well the flavors come through. To ensure you are enjoying all of the delicate and complex flavors that green tea has to offer, here is a guide on how to prepare your tea:

  • Use filtered water at 165°F – 175°F. Green teas should never be brewed with boiling hot water, which can cause the tea to taste bitter. Additionally, poor quality water can mask the intricate flavors of tea, so it is important to use filtered water.
  • Use a heaping teaspoon (~3g) of tea per 6oz cup. Flavor and taste can differ significantly depending on the specific tea, so you can add a little more or less depending on your personal preferences. 
  • Follow steeping time instructions. High-quality green tea should normally be steeped anywhere from 30 seconds to 2 minutes, though the exact time will depend on the type of tea and its grade. 
  • Never over or under-steep your tea. Steeping your tea past the recommended time can make it bitter, and under-steeping can result in a pale cup or inferior flavor. If you want a stronger cup of tea, adjust the amount of tea you are using rather than changing how long you are steeping it.
